For the Steak Bites:
- 1 ½ pounds sirloin steak cut into bite-sized pieces
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon steak seasoning optional, for extra flavor
- 2 tablespoons butter
- 3 cloves garlic minced
- 1 tablespoon olive oil
For the Parmesan Cream Sauce:
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- ½ cup beef broth
- 1 tablespoon butter
- 1 teaspoon minced garlic
- ½ teaspoon salt
- ¼ teaspoon black pepper

Ingredient Notes & Substitutions:
- Steak Choice: Sirloin is great but you can also use ribeye, filet mignon, or New York strip for an even more tender bite.
- Cream Substitute: If you prefer a lighter sauce swap heavy cream for half-and-half.
- Extra Flavor: Add red pepper flakes for a touch of heat or Cajun seasoning for a spicier twist.
Step 1: Prepare the Steak
Slice the steak into 1-inch bite-sized cubes.
Season the steak evenly with salt, black pepper, and steak seasoning. Let it rest for 10-15 minutes at room temperature for better tenderness.
Step 2: Sear the Steak Bites
Place a large skillet or cast-iron pan on the stove and set the burner to medium-high. Add 1 tablespoon of olive oil and let it get hot.
Add the steak bites in a single layer, making sure they don’t overlap. Sear for 2-3 minutes on one side, then flip and cook for another 2-3 minutes until browned.
Add 2 tablespoons of butter and 3 cloves of minced garlic. Stir everything together and cook for 1 more minute until fragrant.
Take the steak bites out of the skillet and set them aside.
Step 3: Make the Parmesan Cream Sauce
In the same skillet, add 1 tablespoon of butter and 1 teaspoon of minced garlic. Sauté for 30 seconds until fragrant.
Pour in ½ cup of beef broth, scraping up any browned bits from the pan for extra flavor. Let it simmer for 1 minute.
Add 1 cup of heavy cream, stirring continuously. Cook the sauce over medium heat for 2-3 minutes, letting it reduce and thicken to your liking.
Stir in ½ cup of grated parmesan cheese, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Continue stirring until the sauce is smooth and creamy.
Step 4: Combine & Serve
Return the steak bites to the skillet, tossing them in the parmesan cream sauce until well coated. Let everything simmer for 1-2 minutes to absorb the flavors.
Remove from heat and garnish with fresh parsley and extra parmesan.
Serve immediately with mashed potatoes, pasta, or roasted vegetables.
