  • 16 oz Velveeta cheese cubed
  • 8 oz smoked gouda shredded
  • 1 cup diced tomatoes canned or fresh
  • 1 can 4 oz diced green chiles
  • 1/2 cup milk or cream
  • 1 tsp smoked paprika

Optional: 1/2 lb cooked chorizo, jalapeños, or cilantro for garnish

  • Preheat your smoker to 225°F and add wood chips (applewood or hickory recommended).
  • In a disposable aluminum pan, combine Velveeta, smoked gouda, diced tomatoes, green chiles, milk, and smoked paprika.
  • Place the pan in the smoker and let it cook for 1 hour, stirring every 15-20 minutes until smooth and creamy.

Optional: Stir in cooked chorizo or jalapeños during the last 10 minutes.

  • Garnish with cilantro and serve warm with tortilla chips, bread, or veggies.
